The search for healthy dishes was the start of “Navy gourmet.” In order to prevent sickness and disease during long voyages, a great deal of research was conducted, including the adoption of Western cuisine. In addition, as eating was one of the few pleasures inside a battleship, a process of trial and error was repeated to provide delicious meals, leading to the creation of “Navy gourmet” dishes. Kure, a city closely connected to the former Japanese Navy, is now working to revive dishes based on cookbooks from the Meiji Navy and recipes from Showa navy ships.
